However, when I read that her husband likes them with syrup; I was sold on the idea. Breakfast happens to be my favorite meal of the day, when I actually have time to make it like on the weekends. I love the combination of salty and sweet: potato pancakes with syrup and bacon!! Yummy!! The pancakes are time consuming to make because you have to bake the potatoes first then strain them or put them through a food mill but definitely worth the results. They are light, fluffy, and delicious with what topping you prefer.
Just a place to add my thoughts about food.....how taking time to cook a meal brings family and friends together to make great memories.

Matafan - Potato Pancakes
For this French Friday with Dorie we made Matafans. There were several suggestions in Dorie's book, Around My French Table, on how to serve matafans (potato pancakes) as hors d'oeuvres.

It's funny how these work so well with sweet or savory toppings. Looks good!
Pretty! Those crispy edges must have been so good. :-)
So perfectly round! Breakfast is so much about sweet and savoury. I agree with you that these pancakes make great addition to breakfast.
I wish I had read the blurb above the recipe before I made them so I would've done them for breakfast! I bet they were awesome with the syrup!
They look beautiful with the syrup and bacon. I served mine plain with dinner, and I'm beginning to think I made the wrong choice!
I love how versatile these are - and I'll bet they were great with maple syrup and bacon!
Have a great weekend!
Looks like you and I both have two posts on Fridays. I really loved these, they were so light and yummy! Yours look wonderful with the bacon and syrup!
Yes...I will make these for syrup next time.
Well I guess we all know what we can do with our leftover mashed potatoes now! BREAKFAST!
I'm going to try these with syrup, they look delicious! I wonder how the batter would hold up if you made it the night before?
The bacon alongside your syrup soaked pancakes looks incredibly delicious! I love the versatility of these pancakes!
beautiful presentation. I've eaten them for breakfast - but skipped the syrup. Seem like they are great either way!
Breakfast is my favorite meal too, but this seems like such a long recipe to make for breakfast. Yours look excellent! Maybe I'll have to wake up early to try this...
Breakfast was a great choice! I think they were better served as a breakfast item. Fantastic looking plate!
